Easy Sausage & Penne Dinner

This is something I threw together for a simple quick dinner one night for my boyfriend and I. We were both craving sausage, but we didn’t want it in the same way we usually eat it. The great thing about this recipe is that even the most novice cook, could prepare this for their family.

4 small servings  or 2 large servings • 5-10 minutes prep time • 30 minutes cook time


  • 1 sweet red pepper julienned
  • 1 c. cherry tomatoes sliced
  • 1 1/2 minced garlic cloves {i used large cloves)
  • 1/4 c. fresh spinach finely chopped
  • 1/2 c. mozzarella pearls or add desired amount
  • 2 Eckridge Beef sausage links – sliced
  • 1/2 box (8oz) Rojoni 100% Whole Grain Penne Pasta {can add more if desired}
  • Pinch of salt and pepper to taste


  1. Cut the red pepper, garlic cloves, fresh spinach, sausage links, and cherry tomatoes. Set aside.
  2. Place pot of water on stove and bring to boil.
  3. While waiting for water to boil, cook sausage on a non-stick skillet until browned. Set aside in separate bowl.
  4. Add pasta to boiling water. About halfway through the pasta cook time. Add all the chopped ingredients and sausage to a clean non-stick skillet. Cook together on about low-medium to medium heat for 3 to 5 minutes {all depends on your stove top}. Do not cook food on skillet for too long you do not want it to become soggy.
  5. When pasta is done, drain pasta and pour back into pot. Add all the skillet ingredients. Add mozzarella pearls and stir.
  6. Add salt and pepper for taste.
  7. Stir, serve, and ENJOY!!!
